IN THE CELLAR

Autumn is the time of breeding and malolactic fermentation (it is the transformation of malic acid in red wine into lactic acid to make it more flexible wine). All wines are then racked several times during the fall and winter.

IN THE CELLAR

It is during the months of December and January that are performed extractions * of white and rosé wines, the assembly of vintages and bottling in February. Follow extractions of red wines in March. Throughout the winter, the wines are followed, tasted, analyzed, to allow each barrel or tank to reveal its full potential. * Racking is to separate the clear part of the wine deposits (lees) that form at the bottom of the tank. This operation is repeated several times.

Spring

IN THE VINEYARDS

April are made of spring plowing and display of strains. In May and June is the time of débourgeonnage (remove unnecessary buds and releases) and tying the branches. (Twigs son recovered between 2 iron: so they do not drag on the ground)

From the beginning of spring, in April, the red wines are blended (the assembly is the mixture of the same origin but different wine varieties) and it makes topping up barrels. (Operation to add regular wine in each barrel to keep it full and avoid contact of wine with air). Summer

IN THE VINEYARDS

July is the time of the topping (cutting the heads of the major branches) and stripping (remove leaves that hide clusters), followed by stalking and weed control. As early as mid-August, the maturity of the grains is checked regularly. The harvest ranged from late August to late September depending on the varieties. Depending on the vintage, the grapes are harvested mechanically or manually.
